I am surprised that there is no orange juice!
What is the handle of your wok coated with to keep it from burning your hand?
It doesn’t get to hot - there is a shield on the iron bowl that prevents any direct heat from getting to the handle!

regulator says 0-30 regulator, not 0-60
Yes when this video was produced I originally used the 0-60 psi regulator, The burner was rated at 72,000 but when I tested the 0-30, that is what I was getting, I was getting the same with the 0-60 that was what the burner was rated, I put the 0-30 psi & 0-60 psi regulators to a boiling test, 1 US gallon of cold tap water the result was both (3:30) 3 minutes & 30 seconds to hard boil. After the test I realized I didn't need a 0-60psi regulator for this burner, I was always going to get what the burned was rated for (72,000) btu. Nice video. How heavy is that wok? I just bought a carbon steel wok, and it's like 4.5 lbs. I can normally toss food in the air pretty well with a lighter pan, but I feel like I'm going to need to adapt to this sliding style. Do you feel like you get pretty good wok hei, where the food kisses the flame?
